This traditional bamboo sushi rolling mat, called makisu in Japanese, is used to form maki rolls. If you want your sushi to look like restaurant quality, you need to use a rolling mat!
Use the mat to slowly ease the rice around the filling and then roll to form a cylinder. If you are using a nori (seaweed) sheet to wrap the rice, try wetting the edge with water or soy sauce to help it seal. remove the sushi roll from the mat and slice into even sized rolls with a sharp knife. (Our nori is perforated; use the perforations as a cutting guide.)
