Shitake mushrooms are a prized ingredient in both Chinese and Japanese cookery. The shitake mushroom has a wide cap and a smooth, delicate flavour. Soak in hot water for a few hours before use; save the water and use as a light stock when cooking with the mushrooms. 200g packet.
