  • Miso Soup

    Miso soup is one of the most popular soups in Japan, and it's also very easy to make.

    Here are the ingredients that you need to make this simple yet delicious soup:

    Ingredients

    • 1 small sachet (approx. 1.5 teaspoons) dashino-moto powder
    • 1 small block (half cup) tofu, cubed
    • 3 - 4 tablespoons miso paste
    • 3 cups water

    Method

    1. Bring the water to the boil, add dashino moto powder, whisk to make sure the powder completely dissolved. Turn the heat down to medium level, add cubed tofu, and cook for 2 minutes.
    2. Put miso paste in a bowl, add around 0.5 cup of the dashi soup stock to it, mix together until the paste melts and forms a smooth texture, then add this to the rest of the soup stock. Simmer for a further 1 minute, then serve.

  • Chicken and Sweetcorn Soup

    Ingredients

    • 1 can of cream style sweetcorn.
    • 2.5 -3 cans chicken stock (or water).
    • 1 cup cooked chicken meat, roughly chopped.
    • 2 egg whites.
    • 1tsp grated ginger.
    • 1tbsp cornflour.
    • Salt and pepper.

     

    Method

    Pour cream style corn in a saucepan. Using the same can, measure 2.5 to 3 can of chicken stock or water to add to the same saucepan. Mix the contents well, and bring to the boil. Season with salt and pepper.

    Mix together the egg whites, ginger and cornflour. Add the chopped chicken and pour the mixture into the saucepan and stir well into the soup. Simmer for two more minutes and serve.

    Alternatively, you can substitute 1 can of drained crab meat for the chicken, and you have delicious crab and sweetcorn soup.
