  • Bubble Tea

    Here is our favourite recipe for bubble tea.

    To prepare the pearls

    Ingredients

    455g (1 pack) Tapioca Pearls

    3 litres of water

    Method

    Bring the water to the boil and stir in the tapioca balls. Simmer for 15 minutes.

    Allow to cool for 30 minutes and then drain, rinse with warm water and allow to cool.

    You can store the cooked pearls in the refrigerator for a few days, or reduce the quantities shown above.

    To prepare the syrup

    (This is optional; you can use honey or stir in sugar to taste)

    Ingredients

    200g white or brown sugar

    200ml water

    Method

    Bring the water to the boil and then stir in the sugar over a low heat until dissolved. Allow to cool.

    To prepare the bubble tea

    Ingredients

    100g of prepared tapioca pearls (see above)

    250ml of chilled brewed tea (you can use black tea, lychee tea or green tea)

    250ml of milk

    2 tbsp syrup (see above) or honey

    Ice cubes or crushed ice

    Method

    Stir (or shake!) the ingredients together and serve in a tall glass with a bubble tea (fat) straw.

    Try the drink made with different teas, or add fruit pulp e.g. peach for a super fruity drink!
